which wheat extract for a belgian wit?

Wed Jun 21, 2006 4:39 am

I'm planning on brewing a Belgian wit as an extract + mini mash brew. I know this is not going to turn nearly as good as an all grain w/ adjunct mash version, but I'm still a beginner. Which brands of wheat extract work well for this style? I've used Muntons in the past for a hefe and it was fairly dark for the style. I'm sure some of this was due to caramelization I would like to keep mine a light as possible without sacrificing any flavor. Also, should I use a late extract addition? Any feedback would be greatly appreciated.

Thanks,
Kevin

I've had good luck with using the late extraction method to control color a bit more. I usually start with 1/2 the extract at the beginning of the boil, then add the rest 10 min prior to flameout.
That said, you'll never be able to get a -really- pale color using extract, or so I've been told.
On tap: cider, irish stout
Primary: amber lager, strawberry blonde clone, witbeer
