Go for the Mild. I have been messing around with Milds a lot lately since it is such a nice beer to drink and is low in alcohol so I don't get all fucked up everyday. I know that the J man has some good recipies for Milds, but here is what I like.

75-80% Crisp Maris Otter
10-20% Crystal Malts (I use some Simpsons dark crystal 65L and some Special B)
5% Chocolate or Victory

18 IBU's of East Kent or Fuggles

Mash high say 155F and ferment low say 65-67F. And don't oversparge because this beer just doesn't have the balls, I mean grain to take it.

The resulting beer will be nice and dark with some ruby tints. It is very malty.

If you are going to Mini-mash you could use the MO extract B3 carries and then do the mini mash with the other grains. Serve this beer at 55F and it will make a very nice pint. I call the beer my Welsh Mild.

Do a dunkelweizen
it is quick, easy, and the yeast will hide most minor off flavors.
Have fun and keep the gimp in the closet when you brew so his stank won't queer up the beer.

A dunkelweisen gets my vote. B3 has an extract that is 60% wheat and 40% barley that would be a perfect base along with some steeped dark grains. Use a Wyeast 3056 Bavarian Wheat yeast. Jamilz should be able to help you with an exact recipe. Good luck!

Hi guys...
thanks for the awesome feed-back...really appreciate your help.
I haven't decided on what to brew yet, but the amber thing sounds kind of interesting. Weissbier is not Justin's favorite, so I rather go with something, that he would really love too (gotta make him proud to make up for being a BITCH :x )
Jamil I am planning on brewing this saturday afternoon, but nothing is confirmed yet as boy-toy might be brewing himself....would that fit in your schedule?!? Man, how lucky am I????

Jamil has a great American Brown recipe. I made it last year and have taken 2 second places in category with it. And I only entered it in 2 comps! Of course there is more to the story (sometimes screw-ups turn out great)... but Jamil's recipe is really good! I'll be making it again in a few weeks.

Sounds like a plan. Just don't sing Jamil any Billy Joel songs...He might go into heat.

Thanks! It was my second attempt at entering comps. Got a lot of great feedback and will be making some fine-tuning on my process and recipe.
