A great Sean Paxton dish.

So I won a cookbook at the AHA rally this weekend in Northglenn, CO. And felt obligated to cook something out of it today. So after fingering through The Best of American Beer & Food: Pairing and Cooking with Craft Beer by Lucy Sanders. I found that several of the recipes were from our dear friend Sean Paxton. So automatically I chose one of his. I chose to make his Waterzooi, which was amazing and if I can make it anyone can. It really is a great dish for a cold winter night. I also picked up a few cheeses to pair with the Great Divide, Hades that I used to make the waterzooi.

I made the Waterzooi too, using my homebrewed trippel. It was fantastic.

Did you get those crackers from Costco? They look familiar...and if so they're awesome.

Oh man! I'm trying that this weekend! That Waterzooi looks excellent! And cheese and crackers? What is better that really good cheese and really good beer, that's where it's at. I've been taking nice cheeses and throwing them in the smoker for a few hours, that makes an excellent cheese almost unbearably incredible! And +1 on Costco. I worship Costco. I'm voting Costco for president. I got the Kirkland Signature tighty whities to prove it.

Nope but I'll have to keep my eyes open for them next time I'm there.
