I don't know about head cheese, but when I moved down here I got turned on to shrimp and grits, low counrty style. Yes, they made me slap my mamma.

Head cheese is hardly redneck, plenty of very nice restaurants serve it.

It is basically skeletal muscle set in aspic. There are far "grosser" things I could ask you to eat (organs, blood etc). I think it is the name that bothers people more than what it actually is.

grosser in quotes because I eat damn near everything. I've not had the icelandic fermented shark yet though.

Organs and blood can be delicious.Yum blood sausage. Fermented meat/fish is definitely where it gets nasty.
