Tallow biscuits

Ok, I've just been cooking some very traditional Argentinian biscuits, so I though I'd post the recipe, in case somebody is interested.

Ingredients:

500g all purpose flour
1 Tbs salt
1/4 tsp sugar
150g beef tallow
180cc water
2 Tbs dry yeast.

Take the flour, salt and sugar, and make a crown on the table. Mix the yeast with the water, and pour in the center. Add the tallow, mix everything and knead until you get a homogeneous dough.
Cover and let rest for about 1/2 Hr.
Stretch with a rolling pin, until the dough is about 3/16" thick. Cut with your favorite cookie cutter, and lay on a greased cookie tray. Poke each biscuit several times with a fork.
Let rest for a couple of hours, covered.
Put in oven at 400*F, until they're golden.
Let them cool down.
Enjoy! :jnj
