I used recipes from some great blogs I found on Japanese cooking.

Here's the Chasu (I used rolled & tied belly)

The noodles

and the Broth

I'm planning a ham dinner (it's part of the pig, so I guess it's pork), and I'm trying to figure out what beer to cook it in. I'm going to be stuck with store-bought (or butcher-bought) ham, so I can't feed it any grains á la Sean Paxton, but I CAN continually baste it in beer. I have a chef friend who does that with Dr. Pepper (tastes AMAZING!), but BEER is where I want to go.

So what beer do you all think would go well with ham? I'm thinking an Old Ale, Scottish Wee Heavy, or possibly a Robust Porter. I want complexity of flavor, and I REALLY want to taste the beer. And every time I've cooked with stout or some of the lighter ales, all of the other ingredients COMPLETELY overpower the beer.

Any thoughts?
