i always put my rings in seasoned flour, shake em off, dip em in egg/milk wash, then dip em in panko bread crumbs, shake off excess and fry in 365F oil. you can see a pic of them if you look for the meatloaf volcano under great food vigorously.

I do similar except use melted butter pecan ice cream instead of egg/milk.

Beer Captured has a great recipe for beer battered rings.

If I had my copy available, I'd give you the recipe. Anyone else got it?

Beer Batter:

3/4 cup flour
3/4 cup corn starch
1/2 tsp baking soda
1 tbs sifted powder sugar
2 tsp salt
1/4 tsp white pepper
1 tsp lemon zest
1/2 tsp garlic powder
1/8 tsp cayenne pepper
1 1/4 cups pale ale or IPA (thanks for catching that rhino)
peanut oil for frying

Sift your dry ingredients together. Stir in the beer.

Dredge for onion rings:

Stir 1/2 tsp salt into 1/2 cup flour. Coat onion rings with flour mixture before dipping in batter.

Heat oil to 375 F, fry till golden brown and enjoy.
