Pectic enzyme *post* ferm?

Mon Dec 01, 2008 2:53 pm

I have a cider that just finished primary and is very hazy, almost opaque. Can I add pectic enzyme after fermentation has finished, or am I wasting my time? I'd like to clarify it a bit..... Thanks in advance.

I'm no expert but here is what I did. I brewed some wort and mixed it half wort, half apple cider, added pectin enzyme...after fermentation it was still cloudy so I added more. Let sit for about 8 days. It really cleared up. Tons of sediment. I bottled it. After a couple weeks it was great. However after a couple more weeks (even at cellar temp) there is more sediment in the bottles that looks like the pectin sediment from before. I think the enzyme was not done. Perhaps I needed to let it sit longer before bottling. I'm brewing another half wort, half cider right now and am going to let it settle for a lot longer. At about 15 days in secondary.
