I'd really appreciate some sage advice. This year is my first making cider. I've fermented 3 gallons for 18 days when there was little CO2 coming off and SG of 1.006 (down from OG of 1.063), then racked it into a carboy. When I racked it there was a huge amount of sediment in the bottom (over 2 inches). Now after 3 days there's 1.5 inches of sediment. Should I be concerned and rack it again or just leave it. I'm concerned about it autolysing (the only batch of beer that I've ever had go bad was from that). I did get virtually the end of a large (probably around 1000 gallons) batch of juice which had a lot of particle matter. I'm in a quandary as I'm loathed to chuck out even more of my cider but at the same time don't want it all going bad.
When racked the cider tasted very acidic (pH 3.4) and dry, how much does it mellow in its secondary stage?
