Cider Fermentation

Mon Mar 26, 2007 12:21 am

I got a gallon of fresh pressed apple juice from the local orchard (Oak Glen, CA) in November. I crushed and added a camden tablet, waited 24 hours then pitched a tube of WLP775 English Cider Yeast. O.G. was 1.065 and it went crazy for a couple of weeks and then cleared up. At 1 months time I took another reading and it was at 1.055 :? So, I let it go. Now it's 3 months later and it's still bubbling in the air lock. Anybody have any ideas? This is my first cider.
