That looks AWESOME, Smurf.

One other way to a faster mead is do a Braggot. Since it's not all honey, it will condition out a lot faster.

I did a mead I fermented and started drinking in one month.
for 3 gal.
5 lbs sue bee clover honey
water
yeast nutrient
2 packs dry lager yeast
Starting OG 1.06
it finished at 1.015
After 5 weeks I added sparkeloid and kegged in a 3 gal keg. Small in alcohol but good flavor.
Nothin special but a quick turn around
sitting in the corner

Would you share the kumquat recipe? Like how many pounds of fruit in what size batch....
I made the ancient orange a lot of times and after 1 year in the bottle it is NICE!!!
