Safe Temp for end of fermentation

I'm fermenting my first batch using a chest freezer and a digital Johnson Controls temp controller. It seems to be doing a great job, holding within 1 degree of my set temperature every time I've looked at it.

I plan to crash the temperature at the end of fermentation to clear up the beer.

Generally, what is coolest I can go without freezing the beer?

Are you going to Crash Cool the Beer in the Primary? Or are you going to Rack to a secondary before You crash Cool? Only reason I ask is that I was going to ask the question of whether or not you can Crash cool in the Primary.

Crash in the primary and skip the secondary all together. Just keep it at fermentation temps long enough for the yeast to finish up before crashing.

All times are UTC - 8 hours
