I brewed my first Saison on Sunday June 2nd 2013. I mashed too high about 155 F, don't need that much body for a Saison plus the pre boil gravity was way too high 1.056. OG was of course too high as well 1.084. The style isn't supposed to be any higher than 1.065 for the OG.
I'm doing it for a competition, entry is due in September. The White Labs Saison II WLP566 yeast took off right away at room temp, still bubbling away.
Fermenting: Black IPA, Barley Wine, Cider and Imperial Stout
