Anyone brewed the beer from the APA video?

The recipe is pretty straight forward. I input it into Beersmith and the IBUs seemed really low for an APA.

My other dillemma was that I was going to have to sub out hops for those that I have on hand.

US Golding for Fuggle (60)
Columbus for Chinook (30)
Citra for Centenial (0)
Nelson Sauvin for Cascade (0)

Do these substitutions look palatable? Any suggestions on how best to show off the Nelson hops?

Are you using the same IBU algorithm as the DVD? Not seeing the recipe but based off my knowledge of those hops, those seem like legit subs.

Personally, if you're going to use Citra and Nelson for flameout (whirlpool) hops, I'd go with something like Magnum, Warrior or even Columbus for the bittering. I'm not sure what Fuggle is like as a bittering hop, so I don't know how it would mix with your substitutions.

For the Firestone beers, I'm pretty sure that they are counting on a decent portion of the IBUs coming from the whirlpool. A hop stand, as was discussed on many of the CYBI shows would help you to get the IBUs and max flavor from those hops. Since you're using higher alpha hops though (Citra and Nelson vs. Cascade and Centennial), you'll get a more bitter beer if you use the exact same amounts.

I think is was around 37 IBUs when I brewed it which is pretty much on target for an IPA. I think people jack up pale ales way too much and they are more IPAs then APAs.
