Corn and Oat

Hi Friends

Made some corn beer 80% corn / 20% oat. The colour is great 'Brut' like. I added Columbus hops and Saaz and it tasted quite bitter and 'smelly' the first two weeks after botteling. I also added some champagne yeast for botteling and now 4 weeks after botteling the taste is ok. Very 'dry' aftertaste like a pilsner.

Pls advise for taste improvement ... herbs that go with corn .... sugar additions (I used suger cane - 1 kg for 20 L wort) It doesn't taste sweet ... Alcohol is 4 - 5°.

I'm quite amazed that the yellowish colour disapeared :shock:

Interesting. Please elaborate on the flavor.

I don't use corn as the main grain, so I can't speak with any authority on the subject, but I think that you shouldn't use the sugar, but you might try turbinado or brown sugar to add some complexity.

A quick Google search suggests Chervil, chives, lemon balm, saffron, sage, thyme as good with corn.

I hope you try it again and share your results with us.

With some of those herb suggestions, this sounds like it may be interesting to brew it more in a saison inspired style...

I'm interested to hear more about the corn and oats. Were they malted? Did you malt them yourself? How? If not, how did you convert the starches into sugars?

I used a alfa amalyse enzyme to convert (hard boiled the corn first) :mrgreen:
