Day 28 Update - racked to kegs with 1 tsp gelatin dissolved into 140 ml water. Both carboys sat the last 8 days at 32F before I let them warm slightly to 38F and racked them over. Both taste really similar. The alcohol bite has smoothed out a bit. The dry-hops really some through in the nose.
At this point I say delicious and very dangerous at just over 10% ABV.
