Love Temp Controller/PID Help

Let me start by saying, I am an electrical moron, so I need your help. I have 3 Honeywell SmartValve's to control the natural gas to the burners. I have the Thermocouple's in all the pots (threaded 1/2"npt).

I need to know what model, either Temperature Controller or Temperature Switch, to buy. Also, I am not sure of what benifits would be with a Controller over a Switch. The ultimate goal is to automate temp control of the 24vac Honeywell's via a temp probe in the ThermoCouple's on a control panel.

A new temp controller will be coming out in a month or 2.
I have inside information that it will be a kit that can be programmed via usb and will have logging and other cool features. The current plan is for hooking it to 110v for fridges but modifying it as a 24v relay shouldn't be that difficult and may even be a planned option.
If you are looking at doing it right now go get something else... if you are looking for a winter project this might be for you.
