I also have a mini fridge(not the really tiny cube shaped kind, the type that's about 4 ft. tall) and have seen some people have built fermentation chambers by building a small insulated enclosure to extend it and re-attaching the fridge door to the built-on extension. Anyone have any success with something like that? I guess my main issue with this is it seems with the mini fridge totally enclosed moisture would build up inside, and eventually mold. I have seen the fan/ice based chambers, but that seems like a lot of effort for something not much better than just doing it "swamp cooler" style.
