I brew when I know I have a keg coming empty. My kegs never sit without beer in them, thus the sanitizing is straight forward. No need to disassemble that often, just dump, flush and let sit for an hour in Starsan, will sanitizing the lid and gasket as well. Hook up CO2 and purge the beer line and tap. Empty and fill with new beer, purge keg with CO2 to get rid of O2.

Hit with CO2 and regualtor setting to the beer style 'Volumes of CO2' and wait a week. I like the beers to 'mellow' for 4-6 weeks though.

Keg#6 Star San
