Served my first disappointing BORCA today at the company Xmas party :( The spices were very subdued even though I used fresh ground everything. I left the spices in the bourbon for 3 weeks. Too long? I had the 12 oz of bourbon and spices (10 gallon batch) in a quart mason jar. Too much head space? By the time I added enough spiced bourbon to make the spices show up at all, the bourbon was evident as itself, where I had hoped the spices would take center stage. Guess I will try a different spice supplier next year.

Great recipe! Not sure if this thread is being followed much anymore seems like there hasn't been many posts in quite some time. This has been by far a favorite of mine to brew, serve & drink. I did have a question regarding the turbinado. I brewed a 12 gal batch of this and I was wondering if you would recommend doubling the turbinado from the original 5 gal recipe you posted? Wasn't sure if doubling the turbinado would be too much sugar for a 12 gal batch?

Thoughts?

It'll be proportional, so I'd say keep it scaled up along with the rest of your stuff.
