I made a Brown ale a few weeks ago and after 7 days I took a hydrometer reading and I was at 1.012 so I set it out on the porch over night one 40F evening, and kegged it the next morning and force carb'd. My wife and I had friends over for some Trivial Pursuit and I tapped the keg. Wow! really delicious. Too dark in color, great chocolate aroma and flavor. - I knew as soon I was done that I was low in IBUs. but it turned out great!  (in 8 days no less, not even having to try to overlook green/off flavors)
