Finally made my Saison yesterday. Made my starter around 8AM and pitched around 5PM. Trying to follow "Jamil Show" advice to get them active but let them multiply in the carboy in order to get maximum spiciness. OG 1054. Bubbling fermentor about 10PM. I'm psyched!

I took a sample with the tiny beaker I bought from B3, and checked it with the refractomer. OG was 1.079, I forget the Brix reading--it's with my notes at home. I didn't take a hydrometer reading. Just used the refractometer and let BeerSmith calculate the gravity. When I tested it this weekend the I got 8.2 Brix. According to ProMash and BeerSmith, that makes the gravity 1.036. But according to BeerMath on my iPhone and the B3 refractometer spreadsheet, the gravity is 1.006. Who do I believe and why? I have a vial of Abbey Ale yeast to dry it out a bit more, but don't want to use it unless absolutely necessary.

if you want to take another brix reading i can put it into my spreadsheet as a tie-breaker

I made a very quick starter too. 10pm on Friday night and pitched at about noon on Saturday.

Brewed yesterday, hit my numbers and it's fermenting away - so I'm in.

Brewed mine yesterday too. Had some issues with the pumps clogging on my stand, and getting it down to pitching temps, but otherwise hit my #s and produced some tasty wort. Will pitch yeast tonight, and let 'er rip!

I'M IN!
