here's a tip on brewing saisons...you need to give it extra time to ferment. where most other saccharomyces strains ferment quickly and finish quickly, saison yeast appears to ferment quickly but needs extra time to finish. The yeast is known to have a lagging finish.

Count me in.

lets just make sure that we set a judging date late enough to allow for lazy brewers to wait to the last second for everything :)

I'll probably allow my saison to ferment for 4 weeks in primary before i bottle it. I'd need about 2 weeks to come up with a recipe and order it from b3. I think that a "end date" of late august or early september would give enough time for everyone....

Also agree we need to give this one some time to brew and ferment. I'm also need to get some other brews done in the next couple weeks. I'm down to a keg right now which wont last after tonight and will have one being kegged this week. My brewing is behind schedule plus this heat makes me push it back even further.

It looks like we've got some time for these to age a little. Only 7 or so emails received. Plenty registered. Remember, if you are participating, please register AND email. I plan on brewing mine some time this week. However, I don't anticipate the shipping deadline middle to late August.

Saizon Dupont is the best that I can get locally, but there are probably better out there.

Saison Dupont was the only one available at my local BevMo. It was out-fucking-standing. It was like a Wit with a little pepper in it. And at 6.5% ABV, not too bad of a kicker with a few in ya.

No beef. I grilled some pork skewers with peppers and onions, basted with a honey/pineapple juice sauce. They went very nicely together.

Enjoyed the last little bit with an Arturo Fuente.

I'm going to LHBS today to get the last things i need to brew. If this falls through the cracks, then I am going to pitch Brett into my saison.....or maybe I'll just do it anyway....

I want in but I can't brew for a few more weeks,
we're getting ready for a beer festival and I can't spare the time until after the 25th.
Any way that we can push back the deadline a little, has one been agreed on yet?
