Knocked off working a wonderful* job in a very large liquor retail outlet at 9:30pm and I am kicking back in this 30/86 ish heat drinking a saison wort using Wey Bo Pils + wheat and dark wheat, that I fermented with WY 1098. It is going down a treat because of the german malt and a solid bitterness, and the keg is about to kick. But then it will be time to tap real saisons. I know it is simple, but I can't believe how good the German malts taste with UK yeast. I might have to make some APAs with just domestic ale malt + that dark wheat, I am sure it would be nice.
