damn it, I want to drink it and make more! lets just say I plan on fermenting my beers two weeks, but in reality it ends up being at most one week. I guess Im pulling a "Justin."

so I just did a hydro measure of my tap water, will do distilled on monday, and with correction it came out to 1.003-ish. I guess I have been hitting my starting and finishing gravities this whole time.

That also means you've been a little low on your OG's, too. Don't worry too much about that, though. 3 points off the OG is way less of an error than 3 points error on the FG.

I also say +1 on lengthening your ferm time.

yeah Ive actually been high on my OGs. crazy how that correlates to high FGs. :D
